Simple Mashed Potatoes – Twice Baked Mashed Potatoes
Some years ago, I discovered this Twice-Baked Mashed Potato recipe, on Allrecipes. I had only heard of twice-baked potatoes. Ever since the first time I prepared this recipe, it has been a family favorite. I do not make it very often but when I do everyone is always asking for more.
The recipe is very easy to follow. I love that I am using mashed potatoes because I am not a fan of potato skins when I have twice-baked potatoes.
Twice-Baked Mashed Potatoes recipe.
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1 tablespoon vegetable oil
- 4 cups mashed potatoes (prepared with milk and butter)
- 1 cup shredded Cheddar cheese, divided
- 1/4 cup crumbled cooked bacon (optional)
- 1 teaspoon salt
- 1/2 teaspoon pepper
Cooking Directions:
In a small skillet, saute onion and green pepper in oil until tender. In a large bowl, combine the onion mixture, mashed potatoes, 1/2 cup cheese, bacon, salt, and pepper. Spoon into a greased 2-qt. baking dish. Sprinkle with remaining cheese. Bake, uncovered, at 350 degrees F for 20-25 minutes or until cheese is melted.
This is an easy recipe that people enjoy. I have made if for my family and taken it to potlucks.
