Mexican Recipes In Crock Pot – Slow Cooker Refried Beans

When we were in quarantine I made fat free refried beans that were not fried, Slow Cooker Refried Beans. Ever since then I have not purchased canned refried beans again.

Preparing these beans is fairly easy.

Ingredients:

  • 1 chopped onion
  • 3 cups rinsed and dried pinto beans
  • 1/2 jalapeno pepper, seeded and chopped
  • 2 tablespoons minced garlic
  • 1 tablespoon salt (I like to use 1/2 tablespoon)
  • 1 3/4 black pepper
  • 1/8 teaspoon cumin
  • 9 cups water

Directions:

  1. Place the onion, rinsed beans, jalapeno, garlic, salt, pepper, and cumin into a slow cooker. Pour in the water and stir to combine. Cook at a High temperature for 8 hours, adding more water as needed. Note: If more than one cup of water has evaporated during cooking, then the temperature is too high.
  2. After the beans have cooked, strain them, and reserve the liquid. Mash the beans with a potato masher, adding the reserved water as needed to reach the desired consistency.

These slow cooker refried beans taste authentic and are a lot healthier than the processed store-bought refried beans.
