How To Make A Cobbler – Faye’s Mini Peach Cobbler
I have been trying to maintain a healthy diet while staying at home, but I have been doing a lot of baking. After my family heard that my mom had made a peach cobbler for herself and my dad, I kept hearing my family say things like, “I wish we had peach cobbler.” They know me well enough to know, I would be preparing one as well.
Thank God! I had most of the ingredients because it is like a toss of the coin when it comes to getting groceries. It is not guaranteed you will get everything you need for a particular recipe.
I had everything I needed except for peaches. When I went to the store, I was able to get two small cans of peaches, I got these in place of one large can. There were only four cans of small peaches on the shelf, thank goodness I only needed one large can. Aside from not have a large can of peaches, the store did not have my preferred brand. I took what I could get. Surprisingly enough they were just as delicious as my preferred brand.
My family was excited when I told them I would be making peach cobbler for them. The excitement intensified when I was actually making it and the sweet smells filled our home.
I have been using Faye’s Mini Peach Cobbler recipe for over 25 years. I first learned of the recipe when I was in college. My mom and a group of her coworkers had created a cookbook that included some of their favorite recipes.
During one of my visits home with a classmate, my mom made Faye’s Mini Peach Cobbler. My friend and I both thought it was delicious. My friend loved it so much she made one when we returned back to our college apartments. For over 25 years, I have pulled out this recipe that has now become a favorite for my family. My daughter has now asked for this recipe so that she can make this cobbler in her home.
Faye’s Mini Peach Cobbler Recipe:
- 1 large can of sliced peaches (Heavy syrup)
- 1/2 cup sugar
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1/4 teaspoon allspice (optional- I do not always use it.)
- 1/2 teaspoon lemon extract or fresh lemon juice
- 1/2 teaspoon vanilla extract
- 2 deep dish pie crust
Directions:
- Preheat oven 350 degrees
- Boil peaches, sugar, 1/2 stick butter, nutmeg, cinnamon, allspice, vanilla, lemon extract for 45 minutes.
- Lightly brown 1 pie crusts in the oven.
- Pour peaches in browned crusts. (After cooking for 45 minutes)
- Unroll remaining pie crust and cut into strips.
- Place strips on top of peaches in diagonal and horizontal squares.
- Take remaining butter, cut into little squares, and place on top of strips of crusts.
- Sprinkle sugar and nutmeg over the crust.
- Bake until golden brown for 45-60 minutes.
- Remove from oven and enjoy.
I allow the cobbler to for a short while because my family likes to eat it a la mode.
I do not know who Faye is, but I love her mini peach cobbler recipe.
