Mexican Recipes In Crock Pot – Slow Cooker Refried Beans
When we were in quarantine I made fat free refried beans that were not fried, Slow Cooker Refried Beans. Ever since then I have not purchased canned refried beans again.
Preparing these beans is fairly easy.
Ingredients:
- 1 chopped onion
- 3 cups rinsed and dried pinto beans
- 1/2 jalapeno pepper, seeded and chopped
- 2 tablespoons minced garlic
- 1 tablespoon salt (I like to use 1/2 tablespoon)
- 1 3/4 black pepper
- 1/8 teaspoon cumin
- 9 cups water
Directions:
- Place the onion, rinsed beans, jalapeno, garlic, salt, pepper, and cumin into a slow cooker. Pour in the water and stir to combine. Cook at a High temperature for 8 hours, adding more water as needed. Note: If more than one cup of water has evaporated during cooking, then the temperature is too high.
- After the beans have cooked, strain them, and reserve the liquid. Mash the beans with a potato masher, adding the reserved water as needed to reach the desired consistency.
These slow cooker refried beans taste authentic and are a lot healthier than the processed store-bought refried beans.
