125 Best Casseroles and One-Pot Meals – Main Dish Casserole Recipes

While juggling a busy schedule, there are many times I need to prepare convenient meals for my family.  Prior to receiving 125 Best Casseroles and One-Pot Meals, by Rose Murray, I was searching for easy preparation recipe ideas.  I love preparing new and easy meals for my family.

I used to be one of those people that associated one-pot meals with the Fall or Winter season, now my outlook has totally changed.  For some reason, I always thought of one-pot meals as hearty meals/comfort food.   To quote a dear friend of mine, he says, “That is good eating.”  And indeed it is.

Yes, there are comfort food recipes in 125 Best Casseroles and One-Pot Meals, but  I was pleased to see skillet meals,  that range from small and quick dinners and stir-fries that are easy for novice cooks to elegant dishes that are entertaining worthy.

The recipes are very detailed, but I wish there were more pictures.  You will definitely make a minimal fuss while preparing the dishes, but most of them do require a long list of ingredients.

I am looking forward to preparing a few dishes.   This is not a dish, but I plan on making the Easy Pizza Dough.  I have been making homemade pizza for my family and I usually buy my dough from Trader Joes’s, but now that I have my new cookbook, I will be making my own pizza dough.

With Spring approaching I have had my eye on the Salmon and Wild Rice Pie.   There are many recipes that I am interested in and am looking forward to sharing with my family.  I love surprising them with a new dish.  125 Best Casseroles and One-Pot Meals will be a huge help.

I have enjoyed thumbing through 125 Best Casseroles and One-Pot Meals for new recipes that will save time, and keep my family satisfied.  I do not want to forget, we may have leftovers if they do not eat the entire pot of whatever I have prepared.
